BBW : Barbecue Bamboo Walnuts fry

Dive in the exotic tropical flavors of the rich and sweet barbecue sauce, juicy bamboo shoots and crispy walnuts this season.
The dish so good it will leave your mouth-watering for better activities than eating.

Servings:
2 people

Ingredients:
50 gms of diced breast piece
50 gms of diced button mushrooms
1 finely diced tomato
1 finely diced onion
2 finely chopped bamboo shoots
1 finely chopped green chilly
½ cup of hand crumbled walnuts
½ finely chopped coriander leaves
2 tablespoon oil
½ cup of barbecue sauce
1 table spoon lemon juice
Salt and Pepper to taste

Method:
Marinate chicken and mushroom  in salt, pepper and lemon for 10 minutes before cooking
Shallow fry onions, green chilly and bamboo shoots till shimmering brown
Add tomatoes and mix well
Now add barbecue sauce, lemon, pepper, salt and 1 tablespoon of coriander leaves, mix well
Add chicken and mushroom to the mixture, mix well
Lid the vessel and let it cook for 10 minutes
Unlid, mix well and let it cook for another 5 minutes

Serve hot garnished with sprinkled bamboo shoots, crumbled walnuts and coriander

Goes best on an Autumn evening with a glass of Scotch on the rocks.
